Peanut Butter Cookies - 3 ingredients

The easiest 3 - ingredient cookies ever!

1 cup coconut sugar

1 cup peanut butter or almond butter

1 egg

Mix together. Makes between 12-15 cookies.

Preheat oven to 350 degrees. Place 1 inch dough balls on an ungreased cookie sheet. I used a meat tenderizer but you can use a fork too or just the palm of your had to slightly flatten the dough.

Let cookies cool completely on cookie sheet before transferring.

The BEST and TASTIEST (healthy) Banana Pancakes EVER! Seriously, these are mouth watering. Okay, okay, The Original Pancake House has some amazing pancakes too, but if you’re looking for a healthy version,,,,, this is it! These pancakes are my weekend treat!

Recipe:

  • Protein Pancake and/or Waffle Mix - mix per directions

  • 2 ripe mashed bananas

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

Mix together and pour batter on lightly oiled griddle or pan. I use coconut oil.

Toppings:

  • Almond butter

  • Greek Yogurt (layer pancakes with greek yogurt)

  • Grain free granola

  • Blueberries
